The FFXI Leviathan is an eel like snake monster. This massive serpent is no mug when it comes to thrashing people bad. In FFXI, the Leviathan helps the Summoner control waves and water. But to get the ability to summon a FFXI Leviathan, you are required to defeat the notorious monster in battle first.
To fight a FFXI Leviathan you have the option of fighting it solo at level 20. Or you could take it on at level 60+ along with a party. The level 60 party fight is called the Prime Fight in which you fight Final Fantasy XI Leviathan Prime. This monster is tougher than the level 20 one, but then you fight it along with a party so there are more guys around to tackle it. Essentially, the Leviathan you get after any of the fights is the same, so the choice is wide open.
To get to the FFXI Leviathan you have to get to the NPC which will teleport you to the Cloister for the fight. You will spot the Leviathan NPC at Norg beside the dock. The give away is that the NPC will always be standing with a Taru so spotting him should be easy enough.
Before you go into a fight, remember that days do matter in Vana'diel. Opt to fight an Avatar on the day it is weak against. Its strength is the same for the rest of the days, so look to take it on when it is at the lowest ebb of its strength.
